Dal Makhani

Dal makhani is a delicacy from the state of Punjab in India. This Lentil Delicacy , combined with Kidney Beans is tossed with tomatoes, onions, ginger, garlic, cream & spices.It is a sumptuous meal and a staple diet in Punjab and most of Northern India. It is commonly eaten with roti or Rice.

Traditionally this dal was cooked on low flame, for hours, on charcoal. It had 'malai' (cream) or fresh butter added to it. This gave it a creamier texture. When prepared in restaurants, it is cooked slowly on low heat and often has a large amount of cream and butter added.

Baingan Bharta

This popular brinjal (Aubergine/ Eggplant) based recipe is a hot favorite in north India. The large size brinjal’s are smeared with oil and roasted well on open fire. Then the roasted , cleaned brinjal’s are mashed & cooked well with chopped onions , tomatoes & a spice mix. Usually it is served with hot roti’s or phulka’s.

Paneer Tikka Masala

Simple yet special, this dish has a tangy flavor.  In this dish we marinate paneer (Indian Cottage Cheese)in lemon juice, ginger, garlic, green chili, coriander, chili powder and salt. Then this is skewered with large dices of Onions , Capsicum & Tomatoes. After this is cooked in tandoor ( Clay Oven), the skwered Paneer tikka is tossed in a mild & falvorful gravy based of cream & tomatoes. This a hot favourite dish in many Indian restaurants.

Mutter Paneer is a popular Indian dish consisting of Paneer ( Indian Cottage Cheese) & Green peas in a medium sweet & spicy sauce. This is one of the best known dishes in Indian cuisine. It is quite nutritious and high in calories. It is usually served with an Indian bread (Naan, paratha, poori, or roti depending on region).

Dal Tadka

This Lentil preparation has traditionally evolved from North India but now it's the most common item available at any kind of menu card in all types of restaurants & food joints across India. Usually made of Toovar Dal (Split Yellow Gram), this preparation also has onions , tomatoes & traditionally tempered with red chillies, cumin seeds & mustard seeds. It is usually tempered in Butter to make it rich. It is commonly eaten with roti or Rice.

Medu Vada

Vegetable Pulao

Tandoori Naan

Naan is a leavened, tandoor or oven-baked flatbread. It is one of the most popular varieties of South Asian Breads & is particularly popular in Northen India. These are baked in open clay ovens also known as Tandoor. Naan's are particularly served with rich north indian dishes.

Plain Kulcha

Plain Kulcha is a north Indian bread, usually eaten with chole. It is a typical Punjabi recipe, originating in punjab, India. Amritsar is known for its Amritsari kulchas . Flour dough, mashed potatoes, and some spices are rolled into a flat round shape and baked in a Tandoor ( earthen clay oven) until golden brown. When baked, it is smeared with butter and then eaten with mildly spiced chole (chickpea curry).

It is a type of Kulcha, with the addition of Onions into it. Onions enhance the flavor of Kulcha's, and gives a bite into it.

Mix Vegetable Paratha

This is another variation of a stuffed Indian bread. In this recipe, a mixture of finely diced or chopped vegetable are cooked & seasoned with spices & herbs. The dough is stuffed with this mix vegetable stuffing & then rolled out & lightly fried on the griddle. Accompaniments can be Yoghurt, green chutney & pickle.

Aloo Paratha

This a very famous Indian ( Punjabi) breakfast bread. The dough is made of whole wheat flour & stuffed with a savoury stuffing of mashed potatoes with medium spices & herbs. This is rolled out & lightly fried on the griddle. When ready to eat, aloo paratha's are traditionally served with butter, yoghurt & pickle.

Methi Paratha (Thepla)

A popular traditional bread of western part of India & more famous in Gujarat. A whole wheat dough is mixed with fresh fenugreek leaves and sesame seeds, rolled into a round shape and gently baked on a flat pan over medium heat. A great snack and breakfast item.
